To keep it tender... Do not cut the meat or eat it for two days. Let it age for two days even before cutting as it lets the fibers in the meat settle down. If you cut the meat after killing it's like cutting a bunch of rubber bands....

Try it next time as you don't need a tenderizer for a bird of what looked to be 6-7 weeks old.

Yes he was! I for one like the taste of chicken skin so I had initially planned to leave the skin on. The pinfeathers were a nightmare as you said and it was just easier to skin him and be done with it, then spend several hours on the skinning process on a bird that wasn't full grown.
