I'm going to try that. I've only ever used boiled potatoes as left over mashed potatoes get turned into fried potato cakes.

I love it - the Princess doesn't so I must add it later - not as good.

Figgy pudding isn't that common in the UK now. In Dickensian times you would probably find it as standard fare at Christmas. I've had home made figgy pudding a couple of times and it's okay, but I prefer a full fruit Christmas pudding.

Is cheese curds the same as cottage cheese? I cannot imagine cottage cheese with gravy. 🤔
No. Cottage cheese is not cheese curd. Poutine could be considered the provincial food of Quebec and quite popular across Canada. White vinegar is also popular on fries. That is not the same as the malt vinegar I get when I ask for it in the states. We also have Beaver Tails. 😁
