Is cheese curds the same as cottage cheese? I cannot imagine cottage cheese with gravy.

Good grief. Don't bless it please. It will spoil the taste.
Figgy pudding isn't that common in the UK now. In Dickensian times you would probably find it as standard fare at Christmas. I've had home made figgy pudding a couple of times and it's okay, but I prefer a full fruit Christmas pudding.

Apparently they are solid pieces of curdled milk. They are called squeaky cheese curds. I do not know why.

No. Cottage cheese is not cheese curd. Poutine could be considered the provincial food of Quebec and quite popular across Canada. White vinegar is also popular on fries. That is not the same as the malt vinegar I get when I ask for it in the states. We also have Beaver Tails.
