Mixing Scratch and Layer Feed

I toss out some layer pellets every morning like its a treat, some days they get some boss thrown out too, other days some scratch. I have been told by the guy at cenex, that scratch will make them fat and they won't lay as well and the feed has all they need for a complete diet. So their treat is their feed, they run for it just like anything else I throw out like a treat.

scratch is only 8% protein, at least that's what i read.

Yes.

Let's put it this way. I call up my mill and order a 16% organic layer ration. The mill operators take my order, go out to the mill and mix appropriate amount of field peas, soybean meal, corn, wheat, barley, and a vitamin and mineral premix to create that layer ration for me. That layer ration is formulated to provide a certain amount of calories at a certain level of protein with the appropriate amount of minerals.

Why would I say "That's surely not good enough...", and add a bunch of additional corn and small grains to this properly formulated ration?
