Hubby's parents are Dutch. We have one of those pans too. You can also use them to make Takoyaki (Japanese octopus balls).

I make risotto fairly often but none of my recipes ask you to keep a lid on ~ only to keep adding liquid...Why can’t you take the lid off too soon?
