It's was very mild earlier. Couldn't have chose a better week to find this issue, as it has oddly been above average temps! Lol Went from -2 degrees last week up to 46 this week!

... I'm still not sure what it is though, as some places looked like it was seeping down and not just "growing" in an area. Can mold seep?

A guess but I would say that more condensation formed and ran through existing mold or that new mold grew on the moisture tracks left by the condensation. Just keep your eyes on it, if more water collects on the underside of the the tin you probably need to add ventilation.
