Multi-function pressure cooker

Congrats! I have 3 Instant Pots...and the smallest (3 qt) just arrived today. :D

I can't believe I waited so long to get my pressure cookers - they've made cooking healthy food so easy. Hope you have fun with yours!

Wonder if you could answer a couple of questions?
1. Do I need to adjust cooking time for my altitude?
2. I'm going to double the recipe, do I need to and more time for that?
3. I'd like to add bell peppers and onions to it, will they turn to mush? Should I just sauté them separate and add them in when it's done cooking?

Any help would be appreciated.

Whew, that's a lot of pressure! ;) I'm hardly an expert, but will try to help where I can. lol
1. If you're at high altitude, it looks like you may want to - this may be useful: https://www.dadcooksdinner.com/high-altitude-pressure-cooking-adustments/.
2. Not usually - it's the size and thickness of what's being pressure-cooked that determines cook time. More here: https://www.365daysofcrockpot.com/how-to-double-instant-pot-recipes/.
3. No, they shouldn't - in fact, many recipes I've seen will have you sauté them in the pot first and then add the other ingredients before pressure cooking.

@FoodFreedomNow Dinner turned out amazing! I chickened out and sautéed the veggies separate, but it all came together with ease. As promised I took pics.....
