I LOVE banana bread, and I used to give my old hens( got rid of them due to pecking issue) the crust and they loved it, so it was an all in one deal! Your recipe is similar to the one I use... got it from my brother, who is a great cook. He likes melting the butter as it makes the whole process easier. I sub one cup of whole wheat flour for one cup white and use brown sugar. Lots of chopped walnuts and cinnamon are good in it too. Banana bread doesn't last long in our house... poor chickens never get any.
