My broilers didn't completely feather out.

Here's what the big Cornish X looked like after the deed was done. The carcass weighed almost 7.75 pounds, not including giblets, neck and feet. The soda bottle is there for scale. He is on a regular dinner plate, and you can barely see it.

I harvested 6 last week at 9 weeks. The largest roo dressed at 7 1/2 pounds, and the smallest pullet dressed at 5 pounds, with the other 4 in between. I skinned and cut up the large roo, and one boneless skinless breast weighed 1 pound 2 ounces! I have 12 more CX that are 3 weeks younger, and am planning to process in 2 weeks. I have to get them done because I have 20 Red Rangers and a mixture of 20 male white rocks, white orpingtons, and white giants coming the week of May 13. I am planning to caponize all of the white birds, and am not wondering if I should caponize the ranger roos......is the meat tender if they go to the 80 day mark?? It isn't that I want that many capons, but I want tender meat.
