You're talking about refereeing I assume. You can assume the roll of the broody hen and give the offender a little peck with your finger on the back of its neck. That' about the only signal they understand as discipline. Any further attempts to intervene are mostly useless. They're working out their places in the pecking order, and it gets settled with or without you.

I'd leave it open 24/7 now that you know they can get away from the bigger birds thru the escape doors.
You'll know when to take way the safety zone by watching the youngers.....they'll stop trying to get away as much.
It takes patience and observation.
