I made this chicken last night...fast, easy and low cal, low fat, low cholesterol, low sodium, low etc., high in taste. 2 large skinless chicken breasts cut in half lenghtways, marinate in skim milk with 1/4 to 1/2 teaspoon powdered garlic, black pepper, paprika, Mrs. Dash to taste . for at least 4hrs... Make a fairly thin mashed potato that will spread easily over the chicken breast about 1/4 inch , turn over to do same on the other side. Lighty spray Olive oil spray into backing dish... Bake uncovered at 325* for 30 min., then broil at 500* about 10 min. untill light golden brown then turn over and then broil for about 10 min or until golden brown. YUMMMMMY !!!!!
