Interesting. I've seen these mystery organs in turkeys that I have parted, but never knew what they were. Apparently they are hidden inside of the skeleton. I always thought that animals that urinate and defecate out of the same hole didn't have kidneys. Ya learn something new everyday!
They don't have the bladder to store the urine. The kidneys filter the blood
 
Fun fact: I eat/sell all my chickens with the kidneys still inside the cavity because I've never taken them out! 😂 If I'm butchering for myself, I leave the lungs in too. Don't tell my wife lol.
I always leave the kidneys in the backs. Backs go in the soup pot. Lungs are an unappetizing spongy texture I do not like, but kidney is a nice brown meaty little nugget in the soup.
 
You did very well. I used to raise Cornish Rock X. Last time was two years ago. I raised 25 and started butchering for Cornish Game Hens. Last ones weighed about 9 lb dressed. They were a gift for my daughter's wedding. I gave them a freezer and filled it with farm-raised meat.
That is an awesome gift!! My second batch arrived yesterday. Today I ordered a chest freezer. :celebrate
