So, we ate our first muscovy for dinner last night. Didn't do anything fancy, just did it in the rotisserie oven. For the first one we really wanted to taste the meat and not do sauces or anything. OMG it WAS SOOOOO GOOD. I thought it was sort of like a good roast beef. I was so proud of myself for cooking it perfectly. And after getting over the trauma of my first ever butchering day
, (I didnt actually do the butchering, Snakeman did it and let me go shopping.
), I have to say, it feels awfully good to know that we humanely and organically raised food for our family.
