My first pickled eggs

Feeling accomplished, to my husband's delight I made my first pickled eggs. I used my friend's Cajun Pickled Egg recipe. Please share your recipes. And eggspecially how you shell the eggs. Some of mine looked like accident victims.

Don’t use the freshest eggs. Those that are really fresh, don’t peel well when they’re boiled.

I just don’t know how long to wait before boiling, but I’ve heard at least a week. Once my girls start to lay, I will be experimenting with timelines.

That makes sense, I am very careful about rotating the eggs, but I did add a couple from yesterday because I had to wash them. And that matches the number of wonky eggs when peeling.
 
I love pickled eggs! As soon as they are done cooking I dump them into a bowl of cool water. I leave the sink faucet trickling and start to smash the eggs against the side of the sink (not to hard, lol) then let the water run on them for a minute and start to peel. I've used eggs I've collected the same day and rarely have issues
 
I just made pickled eggs too! Gotta wait another couple days before I try them. I also used my oldest eggs..about a week. They peeled well. Recipe from: https://www.spendwithpennies.com/pickled-eggs/
12 hard boiled eggs (peeled and cooled)
2-3 sprigs fresh dill
1 clove garlic
3 cups white vinegar
1 cup water
1 teaspoon coarse salt
1/2 large onion (thinly sliced)
1 bay leaf
⅓ cup sugar
4 teaspoons pickling spices
1. Place all ingredients except eggs, garlic, and dill in a saucepan.
2. Bring to a boil, reduce heat and simmer 5 minutes. Cool slightly.
3. Add garlic clove to the jar. Place 3 eggs in a large jar. Top with some of the cooked onion slices and a sprig of dill. Repeat until the jar is full.
4. Pour the liquid over the eggs and seal the jar.
5. Refrigerate at least 3-4 days before eating (1 week is best).
