My guineas are laying!

All I can say is, I wished I lived closer to you all. I absolutely love the taste of guinea eggs and I don't have ant because I am close to the road. My chickens are in hen houses but I don't want to add guineas to them. I tried it one time and the male guineas almost killed my chickens.
 
Guinea eggs are richer, tho they are smaller than most chicken eggs the egg white to yolk ratio is closer to 50/50. Free range eggs, from Hens that eat minimal commercial feed are the best... the yolks are so dark and rich from all the seeds weeds and bugs they eat that they are almost orange. Richer, darker yolk = more flavor

We found our first egg today too!

As far as eating guinea eggs-- they make the most perfect deviled eggs since they are more uniform in size than chicken eggs. This yr we will also try pickling some guinea eggs, I think they will look so pretty --- just not sure if anyone will eat them......

I made the most delicious egg salad this morning. It was supposed to be for lunch today but I couldn't resist. I ate half of it already. :gig :drool
 
We found our first guinea egg yesterday out in the middle of the front yard!

I thought guineas were secret layers if they free ranged. Wasn't expecting to see the egg laying out in the grass. My hens are only about 6 months old so that could account for the fact they have no clue what they are doing.

LOL sometimes at first the young Hens will just squat and drop them wherever... it takes them a while to figure out what their bodies are doing. I've been finding a few random eggs here and there recently too, usually near the coops where the Hens want to lay them, but the gates are shut so they can't get in... so they pace around squawking til they can't hold it any more, lol.

I have 3 hens and they each lay an egg a day. I don't eat eggs everyday so the add up fast. I usually give them to the neighbors who's yards they munch in. One said they were the perfect size for making an egg sandwich on an English Muffin. Me I prefer them to be fried, they taste the same as chicken eggs but a little richer with lots more yolk. And the yolks on mine are almost orange.
I really don't want to hatch an chicks yet until next year or so. I want a bigger coop with a yard so the little ones cannot follow Mamma out. Besides I LOVE the eggs.
