My homemade noodle drying rack....pics

Great JOB! It's so rewarding when you have a problem and come up with a great solution and it only cost you $2.50 to boot.

Wow, how do they come out with eight eggs? I have been looking for a noodle recipe that uses more eggs than usual (always need to use up extra eggs), and yours sounds great! I use a rolling pin and cut them with a pizza cutter. They are not as fine as yours, but they are okay.
 
Even with that many eggs they come out wonderful. My hubby who can be the biggest critic in the world says that he hopes I never buy the pre-packaged amish noodles again. He says it's the flavor...so in our household, it is the extra eggs that are making the noodle wonderful!

I checked in several of my Amish cookbooks and their noodle recipes don't use the egg whites...I went to a noodle making get together last year and they didn't use the egg whites either..those were saved for angel food cakes...but when I have made noodles I use the whole egg and roll them thin and cut with a pizza cutter.

if I make 'em in the morning, I can usually package them before I go to bed. If I make an over abundance, I'll throw them in the freezer.
