Good morning, all.
 
Got me a pot of Pepper Pot soup going. Ken is out of town and fighting snow and ice trying to get back home. So I figured if I'd make a pot of his favorite soup. When it's done I'll just tuck it into the oven on 225 and it will be ready whenever he gets here and gets the car unloaded. At least the mountains are still relatively clear.....right now that area from Cheyenne to Chugwater hasn't been much fun.

Morning all!

The boys are out of school today (we call this month No-School November, seems like they're out more than in) and I'm not sure what we're going to do. Honey and I have been busting out bums the last few days and don't really want to make it a work day. I'm tired! But they can't just sit and watch video games all day......have to think of something.

I have a roasted chicken from Costco, I think I'll have Honey pull the meat and make either creamed chicken over tots, or chicken pot pie. I've been craving the pot pie, and I have this lovely rendered lard I could use....that may be the way to go.

It froze last night for the first time. Got a fire burning away in the wood stove, I may have to fix a pot of beans just as a salute to the season. We've got lots of smoked ham hocks to use.
you all make me feel guilty!! we had to take three dogs to the vet for shots and one for a phenobarb testing blood draw. so the kids had eggs for supper

I think I posted it once before....I'll see if can find it. It's really just the basic vegetable beef soup most folks make with small chunks of beef, onions, potatoes, carrots, a can of beef broth and a can of tomatoes and water. I toss in a bay leaf, some garlic powder, a little chili powder, salt and lots of crushed peppercorns. About 15 minutes before serving I toss in a little frozen corn, peas, and green beans and continue cooking until they are done.

Morning everyone...chilly and rainy today...Duck weather. Not really looking life today...but.....guess we all have to have those days too.
Sorry about your mouth Rachel...I've got some nice green and red peppers in the greenhouse too.
 
The pot pie was wonderful!

I learned two important things......

Crappy old single wide mobile home kitchens don't have counter space to roll out a large pie crust.

We prefer a one crust pot pie.


I used half butter and half lard. the crust was amazing, there was just too much of it for the amount of filling. I'll just do a top crust in the future. Probably cause we've done the low carb thing for so long, but it was Sugar Monkey who first said there was too much crust. Oh, but it was so light and flaky, just what I've been craving. I have some apples, I may make a mini apple pie

Labs today, Dr appt tomorrow. need to clean out the outside refrigerator and I have a cabinet inside to clean out. Return overdue library books, go to Wal-Mart, cook beans, thaw out something for dinner. gonna be a good day!
