Pepper Pot soup!!!!Got me a pot of Pepper Pot soup going. Ken is out of town and fighting snow and ice trying to get back home. So I figured if I'd make a pot of his favorite soup. When it's done I'll just tuck it into the oven on 225 and it will be ready whenever he gets here and gets the car unloaded. At least the mountains are still relatively clear.....right now that area from Cheyenne to Chugwater hasn't been much fun.
you all make me feel guilty!! we had to take three dogs to the vet for shots and one for a phenobarb testing blood draw. so the kids had eggs for supperMorning all!
The boys are out of school today (we call this month No-School November, seems like they're out more than in) and I'm not sure what we're going to do. Honey and I have been busting out bums the last few days and don't really want to make it a work day. I'm tired! But they can't just sit and watch video games all day......have to think of something.
I have a roasted chicken from Costco, I think I'll have Honey pull the meat and make either creamed chicken over tots, or chicken pot pie. I've been craving the pot pie, and I have this lovely rendered lard I could use....that may be the way to go.
It froze last night for the first time. Got a fire burning away in the wood stove, I may have to fix a pot of beans just as a salute to the season. We've got lots of smoked ham hocks to use.

yumsI think I posted it once before....I'll see if can find it. It's really just the basic vegetable beef soup most folks make with small chunks of beef, onions, potatoes, carrots, a can of beef broth and a can of tomatoes and water. I toss in a bay leaf, some garlic powder, a little chili powder, salt and lots of crushed peppercorns. About 15 minutes before serving I toss in a little frozen corn, peas, and green beans and continue cooking until they are done.
