If you're not hatching them, I can't imagine a reason not to eat them.
It's been a while since I ate duck or goose eggs, but I recently had an emu egg (scrambled it, if you're interested) and it was nearly all yolk.
Guineas seem to have a more chicken-like yolk / white ratio. Maybe it is a domestication thing?
