Are you having it done by someone else? Every time I try to look on line for someone to 'take care of' three of our cockrels, I get info on state requirements. They talk about small farms (1,500 or fewer birds). How do you find someone for just a couple birds?

It doesn't matter as long as you keep it cool so bacteria can't grow. Some people keep them in the fridge, some keep them in an ice chest. Temperature is what counts, not where it is. You do not store at room temperature. Some people keep them dry, some soak them in a liquid. That liquid might be water, it might be a brine solution.

How many days before I can freeze him?

Check in a couple of days. You are aging it so rigor mortis can pass. If all stiffness is gone you can freeze. Wiggle a leg. If it is really limp, it's ready to freeze.
