Che--Polish can come in White Crested Blue. I wonder if that's what color the mother was? It might explain the color of the chick.
Koh--supposed to be Polish x Ameraucana, I'm guessing the Polish was Gold Laced.
Do you know anything about the color of the Ameraucana rooster? Because that might make it easier to sort out which chick traits would have to come from the mother.
Lu--I'm thinking this chick is either lavender, blue, or splash-- but it will probably become more obvious as she/he grows. A few of the possible mother breeds COULD come in blue (French blue copper maran, blue australorp), and of course there could be some other breed that didn't make the list. This one's definitely a real puzzle right now.

Turns out she has two Ameraucana roosters, one splash and one white with copper accents. I think the mystery of all the blue/splash chicks (Lu, Brenn, and Che) is officially solved.
