The protein percentage should be printed on the tag of the bag. If it is not – ask your feed mill what the protein percentage is for the feed you are feeding.

To increase her protein intake, you can feed her some scrambled or hardboiled eggs.
 
We've used small amounts of canned cat food after molt, perhaps that would help you up the protein in her diet without having to change out your feed for the overall flock or buy a higher protein feed just for her.
 
Actually, knitting a sweater for a bird has been done. Years ago, the Tasmanian Conservation Trust put a call out to knitters via Audubon magazine to knit jumpers (sweaters) for fairy penguins who had been caught in an oil spill. Cleaning the oil off them took all the body oil that they use to keep warm.

So a friend and I knitted a sweater and sent them to Tasmania. We got back a little "Friend of the Fairy Penguins" certificate and a picture of them. It was really cute.

Using some very soft wool, I could see where a sweater for a chicken could be done. But you'd need to watch for sensitivities.

Organic poultry feed tends to be all vegetarian, no animal protein source. If you don't mind it, try feeding them catfood or eggs (add some olive oil when you cook them) on occassion. Pieces of fresh fish work too.
 
I had 2 BA hens in saddles all summer because of too much roo loving. Both are just now molting. One lost almost all her tail and has bright new blood feathers coming in. So, I don't think your Ninja will look any different until she molts. Up her protein at that time to help the feathers come in full and healthy.
 
I would jack up her protein amount like go from a layer to an all purpose with higher protein and for every 50 #s of food, mix in 1 - 2 lbs of whole flax seeds.

It really helps my girls when they are molting and such. Their feathers look healthier too and shiny. Or open a can of Salmon and give them a little each day.
