Brown Red rooster (NN) x Black NN.

The dad is 1/4 Jersey Giant and mom is 1/2 Jersey Giant, so these two are 5/8 Jersey Giant birds. Waiting to see the size on these two.
 
Oh, yeah. Turned out AMAZING!!!! I just did a cup of salt in about 1.5 gallons of water for the brine, nothing fancy, and because my week was crazy at work (including working until 1AM several days), I only just cooked him tonight - a 6-7 day rest/brine.

Just stood there at the stove eating bits off the carcass like a caveman (cave woman?) Yuuuuummmmmmmmm....... :drool

You know, we keep wanting to push the weight higher, and I understand that, but this is honestly the largest chicken I've ever cooked, and while I don't mind, I'm not sure I HAVE to have a chicken this big, and certainly no bigger. But I do wish my girls were bigger - I think part of why Snape is being so hard on my girls' backs is because he's so much bigger than they are. Last time I weighed them, they were 4.5-5lbs each.

Agree on the not needing bigger. So I'm trying to incorporate smaller breed in and see how it goes. They are Altsteirer which are supposed to be medium sized with good egg laying ability. Which remains to be seen. Here they are from NYHal so almost 4 months old. Should start laying at 5 months. I can say the roosters are particularly mean to the hens at least judging from my other roosters. I'm going to put higher roost in to give them areas more out of sight.

When I brine I salt the bird like I would for eating put it in Baggie and refrigerate for a week. At butcher I skin and part the bird so it fits more compact in the fridge. No water in Baggie so almost like a dry brine.
 
I've got 4 screaming little broody bantams all sitting on eggs instead of celebrating their first birthday chowing down on watermelon with the other chooks. All of them are from my NN hens. Fingers crossed for some full NN and maybe a couple scaleless. Only 1 in 4 chance each egg for that, but I can dream. Cross your fingers for me I guess!

My boys try to breed with my bantam cochins. They grab on to 'em and end up grinding on the ground instead, its hilarious. Apparently they really like the ground, too, my favorite hen out there was once the cutest in all the land.. now she's bald!
 
I have zero experience with NN's, so I am coming to the experts. Super sweet bird about 4-5 weeks. Cockerel??? Bought as a pullet, but you know how that goes. Gotta love those soft, sweet eyes.


if you are not sure about the age wait a bit longer to see. I have recently had a mystery chick that luckily turned out to be a pullet. it looks more like boy but some NNs have big combs and wattles.

And most of my boys are just friendlier than the girls at this age. While most of the pullets keep their distance, the cockerels always run right to me, want to be pet, perch on my arm or shoulder....that's why it's so hard for me NOT to get attached to them.

my jumbo had huge thick legs and she was like a puppy! that's why I wait 8 weeks to see what they are. except my BCM cockerel - he had huge comb at 2 weeks only!
