I finally got around to trying it, and it's a tad disappointing. Drier than it should be because I used pregrated carrots (I didn't have good time or energy to do it myself) and a gluten free flour that was a bit more drying than usual. I also cut the sugar, imagining the amount to be quite a bit sweeter than necessary. Ah well, it's alright! It's more like a bread, I just wish the carrot came through better. It's somewhat lacking on flavor. The cream cheese frosting adds some sweetness, but I think it almost detracts from the "bread" itself. It was still a fun thing to do!Good to know!
