Do try my pomegranate quail recipe - it's fabulous. I worked in a southern Italian/Sicilian place in San Francisco and this was a headliner on the menu...
I pour 2 cans of green beans season with garlic salt and pepper into a ductch oven. Wrap 6 or so quailin bacon seaons with pepper and a little garlic lay them on the green beans put the lid on and Cook at 375 for about 35-40 min depending on your oven heat. MMMMM MMMM GOOD! You can also cook the green beans seperate and if you have an electric pressure cooker, do quail the same way add a cup 1/2 water and pressure cook for 28 mintues on high pressure..fall off the bone, best you can get.
Season your quail all sides stuff with sweet jalpeno and cream cheese wrap fully with bacon. Season bacon with cracked peppercorns and grill until bacon is cooked.
