Need good extra crunchy recipe for fried chicken **UPDATE***

You are trying to cook it too fast. Around 325F is where you want fried chicken in a skillet.

In a deep fat cooker 375 is more than enough. You need to crank it back down and cook it slower to let the breading cook before it browns.
