I had a poor hatch with my Bourbon Reds last time so I put another thermometer/digital hygrometer in. They are identical in make and model but they show a 10% difference in humidity. Temps are both the same. What do other people use for hygrometers in these incubators? I wasn't sure how to get a wet bulb through the mesh or in by the turner.

Get a small cheap dial thermometer (Petco ones are often recommended on here) and calibrate it. There are instructions on here for how to do it. It sounds very easy and you only need a plastic bag and some salt. You can have as many hygrometers as you want but they're not worth anything until you know how accurate they are!
