I make a Sprinkle Bar cookie that can be easily modified to up the nutrition. It is very high fat, but that isn't much of a concern here.
Sprinkle Bars
1/2 c butter or margarine
1c graham cracker crumbs
1 (8 ounce) package dried mixed fruit, chopped
1 cup grated coconut (I use unsweetened)
1 cup chopped nuts
1 (14 ounce) can sweetened condensed milk
Preheat oven to 325*. Melt butter in a 9x13 inch baking pan. Layer crumbs, fruit, coconut and nuts in pan. Press down lightly with the palm of hand. Pur milk evenly over thetop of layer. Bake until golden bround, 30-40 minutes. Cut into bars while slightly warm.
This recipe can be easily varied. I make a variation with 1 cup dried cherries instead of the mixed dried fruit, 1 (4 ounce) can pineapple tidbits, well drained; and 3/4 cup of mini chocolate chips with all the other ingredients.
This is easy and kids love it!
