Either way can work. Sometimes a mix can give you the best of both worlds (like plucking wings but skinning areas that skin easily.)Yes, after watching several videos of the skinning method, I think I've changed my mind and will do plucking for my first time. Skinning looks like it requires strength and finesse especially around the wings.
I plan on eventually doing meat birds so this cockerel will be good practice. And if I screw it up, at least I know I didn't let his death go to waste.
