I have a jersey giant rooster born around easter this year, and my husband and all his friends want to eat him hahahaha. From what I have read on the forum he may be getting tough eh? Is he too old to get tender meat out of?
 
Someone posted recently that they butchered one older and it came out tender!! Might wanna search this section.. Mine were a little younger than yours and they came out just fine!!

Although I wouldn't throw him on the grill, he will still be a delicious, tender bird if cooked correctly. Try to make him into chicken noodle soup, chicken dumplings, or use him in a crockpot. Letting him sit for a few days in the fridge after butchering will relax the meat and make it more tender also. You could also do a salt/sugar/water brine on him. They do this a lot to make the meat more tender on older birds.

The short answer?

No. So go eat him!

All right, let's first establish the essentials -- are Mister & his pals willing to do the work to process this bird? Or are they just waiting for you to call them to the table once all the messy work has been done?

The truth is that an 8-month-old Jersey Giant should be nice and meaty, and doesn't have to be tough if you let him rest in the refrigerator for a few days after processing, and you cook him nice & slow, using low heat & lots of moisture. But if you don't want to do the work necessary to process him, or you just like him, then tell the guys it's not worth it.

Youtube has very graphic videos that you can look under if you need to see it for yourself. Just go to youtube and in the search device type " How to butcher a chicken" and a lot of types of butchering fowl will appear.

But to cook I use a pressure cooker. I love that pot cause it cooks any age chicken/fowl to tenderness. Adding Green papaya helps with that. Google "Chicken Papaya recipe" and you got a yum yum in the making!

Im so wanting to do it. The ONLY problem left- he was an easter present this year to my kids. They will definately know hes missing....... Theyre 9 and 5. It might traumatize someone.
