Hey ChickaD,
I am way into canning and anything pickeled or fermented except my little chickens...
And I am new to BYC as of yesterday.
It's snow raining here.

So you're into canning? I'll bet you have some sort of actual canner, rather than just using a water bath - at least it works for jams and applesauce and pickled beets! This summer we made a zillion unusual kinds of jam, like strawberry kiwi and strawberry lemon marmalade, blueberry rhubarb...wanted to try different ones.

I still use a water bath works for most of what we want. But I did learn how to use a pressure canner this summer so maybe in the future I will get into that? I make jams but no wild combos like you mentioned they sound great! I make peach, raspberry, etc and lots of pickles. And we just built a root celler which is very exciting!

I'd give my eyeteeth (well, almost) to have one of those! Is it too involved to describe how you did it? It's next to impossible to store root crops well without one...why do you think I'm making all those pickled beets?

I am in Rochester NH. Anyone near me?? I will be having a chicken swap in may here at my kennel/farm. The date is not set yet but I will post as soon as a date is set. My website is www.countrybrookkennels.com . I have 50 chickens. Breeds include: rhode island reds, easter eggers,barred rocks, marans, Rare red shoulder yokohamas, and 9 different breeds of bantams. We are getting 100 hubbard Isa browns in the spring. Some for sale some to keep. we had 50 turkeys we processed:( yuck and sold. We did well and got tons of call backs on how good they were for the holiday. Busy now with our christmas tree sales then a nice break in january snowmobiling at our land in Rangeley Maine. January is a slow month for the kennel and my bartending jobs so we can play.Yay.
 
ChickaD- He have an house /basement root celler and it was not hard at all. Other then losing the space to other things. We just built one wall and insulated the inside walls and put up hardware cloth to keep out critters. Maybe I will try to post some photos?-s
