It does get cold in Ganevoort... I grew up in Binghamton and my brother and his family lived in Saratoga Springs for quite a few years.
I'm not surprised that you found their new hiding place, I've had chickens for 4 years (anywhere from 15 - 50 hens) and have never had all of them stop laying at one time.
If you want more eggs over the winter, use a red heat lamp, but make sure it's secure and can't burn down your coop. Red reduces aggression in chickens.
