The others have given you good advice.
Choose feed that says Flock Raiser or All Flock. The chicken scratch you are currently giving him is a treat more then anything else.
As for how many hens to get, it depends on the induvial rooster. Some roosters get a little over zealous with mating and need at least 5 hens to prevent the hens from being over mated. Some, such as my rooster, do perfectly fine with only 2-3 hens. Get 2-3 at the minimum. If something was to happen to one of your chickens you wouldn't want just one to be left. Chickens don't really care about breed differences. Choose the breeds you want based on your location and personal preference.
If you get more chickens, make sure you have the space. You want 4sq ft per bird in the coop and 10sq ft in the run. Bigger is always better.
