New to chickens in Florida (Brevard County)

Hello my name is Scott and my wife's name is Brandy. She had the idea to get chickens as a hobby and to be able to have our own fresh eggs for us, family and friends after we bought a house on 2.5 acres. Her plan was simple (not really) then it exploded from there. She originally ordered 18 chicks that will be here in the beginning of July, but (there is always a but), on a visit with our daughter in Ocala, she ended up getting 6 chicks (3 white leghorns and 3 golden comets) to get us "started". That was the start of the obsession because then we ended up with 6 more chicks (3 black sex links and 3 blue jersey giants). After researching the jersey giants she wanted to go back and buy the rest of them but they were already sold out. So what's the next solution, order 8 more from a reputable breeder and ended up with 9 (5 blue jersey giants and 4 splash jersey giants). So I have been spent the last few weeks designing and redesigning the new large chicken coop (since the original one is nowhere near large enough) and just this past weekend started building the 16'x16' coop.
Now she is wanting to breed the jersey giants on top of having all of the fresh eggs.
Well that is my story (so far) and I look forward to any tips or tricks.

My first tip is to keep your wife the heck out of the farm stores and away from all chicken sites. She has a serious addiction that needs to be addressed pronto.
