I am doing the same with my flock. Think about getting a rooster (if they are allowed where you live). How many I process is decided by how many chicks hatch in the spring and summer. Plus or minus rooster population. It keeps the flock rotated, young, and once every two years, I buy a new rooster for genetic diversity.
