You might check out the breeds section or even the meat birds section for more answers to this question. As for commercial feed, chickens that lay or you are raising for meat need heavy vitamin and mineral laden feed and these commercial feeds are formulated just for these birds. If you don't feed them properly, you can severely compromise their health.
 
I find it hard to believe commercial feed is the only answer here rather than we are lazy or poorly educated. Any good threads on homegrown chickens?

I don't do the commercial bagged feed and make my own. But inevitably you still have to add a supplement of some kind for them to get all they need for good health. Constant laying drains a hen quickly. Meat birds won't grow well without proper feed.
