For your turkey, do a google search on julia child's deconstructed turkey, depending on age you might want to braise the legs and thighs in your stock. Here's a youtube video as well, be sure to watch part two

Thanks rjohns. I've had folks tell me to cut the turkey in half and smoke it. Or, smoke the whole thing. That deconstruction is interesting and something worth trying. I bet that would work great even on a smoker. Haven't watched part two yet. In the boonies we don't have the best internet.
