Get hardware cloth and use it to cover any opening bigger that 1/4 inch. If you see digging and they got in from underneath, you will need to dig a trench and bury a board connected to hardware sloth to protect the bottom.

It sounds like a weasel and they can get in by very small openings. If it is a weasel, you need to use snare traps for them.

Poultry/Chicken wire ONLY keeps chickens inside. It does NOTHING to stop predators, who can slice through it like butter. 1/2" Hardware cloth is the gold standard for fencing. Has to be securely affixed to frame no gaps. No plastic ties.
