Nice breast cut?

How on earth do you manage to make a nice clean breast cut (as the split breasts sold in the store?) I have managed to mangle most of mine. Is there a special tool of some sort? (No I don't mean a chainsaw) lol

I use a really sharp knife-like a filet knife to slice between the breast meat and the breast bone. I go straight down until I hit the ribcage. Then I put down the knife and use my fingers to peel the meat away from the ribs. Just work your fingers along between the meat and bone. It should peel away pretty well.

Not so sure about that- but somebody will have the answer!

eta: I would try poultry shears. Cut down between the breast and bone like for a filet and then cut thru the ribs with the shears. Just a guess...

My mom does it with one of those large butcher knives with a blade that is like 4 by 10. Just holds the bird up by the shoulder so to say while looking at it and "whap saw whap" and splsits the bird in half... I think I'd cut myself if I tried. My guess is comercially they use one of those meat band saws and just slice the thing by the hundreds.
 
I use a table band saw. If you dont have one... a circular saw will work just fine but uh... make sure you clean it very well before and after.
 
If you don't have a meat cleaver or a very sharp butcher knife a pair of poultry/kitchen shears are a nice tool to have in your kitchen.
 
Thanks, I have those. Maybe they're not really what I need (size) as they won't cut through that breast bone. Do you know what size/brand that would be?
