I have a friend who's hen currently lays at night, when she is up high on the roost. So every morning my friend has to hurry out there and clean up the smashed egg before anyone decides to peck/eat it out of curiosity.
Any ideas on how to curb this behavior?

i automatically pictured a little hammock/parachute hung under her butt to catch the eggs lol

wow, maybe block that part of the roost so she'd have to lay elsewhere but then again they love their roost..hmm..interesting!

A poop hammock works well to catch them. One of my hens started doing that last week and my feed bag hammock (8" below) catches the egg without breaking it. The egg does get dirty though.
