I am considering buying a few more chicks this week. Should I stick with the same breeds, or will any new chicks be ok to mix with my existing birds? Will any new birds follow suite of not laying in the Winter or is that more of a quality of the breed?

As a general rule you can mix breeds.

New birds will all follow the same cycle as your current flock. First year they may lay through the winter. After that they'll stop during their yearly molt, if you aren't doing supplemental lighting to keep them laying.
