x2 on all of this. I'm amazed I still get 1 egg every 3 days or so, from 7 chickens.

Unfortunately if you want some consistency in winter production you need to keep adding new layers each season or save up eggs in advance.

All hens. I don't think we've had any pullets mature fast enough to start laying earlier in winter (I think I had one of the original girls start in early January?) and then the next year they molt and stop laying for winter anyhow.

My one lone layer just left a pile of feathers in the coop this morning, so who knows if she'll continue laying. I had another young hen start back up about 2 weeks ago, but due to health issues she's not a reliable layer at all... she laid 3 eggs in about 6 days and has stopped again.
