Normal Rooster Behaviour

I am curious to have the low down on the pattern of behaviours you can expect from roosters as they grow. I have more than a dozen roosters at the moment of varying ages and the only mature roo is a bantam silkie who although a gentleman is overwhelmed. It seems to me cockrels are rather like human adolescents, the hormones hit and all common sense goes out the window.

If I had a mature LF Roo would he keep the younger roos in line?? Most of the teenagers are not just jumping on every pullet and hen that goes by but gleefully attacking them and pulling out mouthfuls of feathers. A few are repeatedly taking on my 9 year old daughter despite the fact she practically hand raised them. At what age would I assume the behaviour is fixed personality and not just hormone issues? I have been culling based on behaviour but I suspect I may be only selecting the roos that mature late.
