If she's not staying on the eggs all the time, then she's not going to go broody and hatch them. You may have gotten free eggs.
If your not willing to hatch and raise then why are you going through the trouble of getting the equipment?

It's a matter of respect for the hen. She's going to a lot of effort to do this!

Hats off to you on the greyhound adoptions. I have a cousin in OR that has worked with finding new homes for greyhounds for many years...beautiful dogs!

NorthcoastGreyhounds.org is a FUN-Draising enterprise which I began in 1993 in Northern CA. We also functioned as adoption agents back then (there being none other in Humboldt County) and the dogs we homed came from GPA/OR!
