Well I was wanting to retire on of my roosters for the frying pan and i have never done it. I have heard to ring there neck and others to do the old chopping block. I dont know.
What is the best way?
 
IMO slitting the carotid artery is the best way. They bleed out fast and lose consciousness very quickly. Prior to doing it the first time, DH and I watched a lot of videos on YouTube. Search for Joel Salatin videos and you'll find there are plenty of resources. We used an old bleach bottle as a "killing cone", which kept the bird contained. DH used the knife to slit both carotids at once.
 
There are many different ways. I use the chopping block and ax, but I grew up using an ax so I am comfortable with one in my hand. If you are not comfortable with an ax, a hatchet will work also and is easier to handle. You can use a killing cone (do a search on this site) put their heads under a broom handle and jerk, or use other methods.

The best way to me is the one that you are most comfortable that you can be quick and sure. It does get easier with time, not so much that you get hardened to it as that you get more confident in your ability to do it and do it right. To me it is not so much which method, but being quick and sure in how you do it.
 
I go with the throat slit, but the hatchet gets the job done too. Be sure to do something other than the chop/drop if you want a good bleedout without broken bones and bruising.
