Now in time of plenty, gather and store for times of want.

This makes me curious. Does anyone else store eggs without all the prep? I don't wash my eggs and keep them on a countertop in my kitchen, and they keep just fine there for months. I know I regularly eat 2 to 3 month old eggs with no issues. Winter means the countertop eggs actually start to deplete since we're not topping them off daily, but the girls always start laying for Spring again before we run out.
 
That's pretty much what I do but I store my eggs in the carport. I also freeze a coupla ice trays full of eggs just in case, if I don't use them by spring...Voila!Dog popsicles!
I break one egg into each section of the tray and pop a small hole in the yolk with a leetle pinch of salt. I freeze them and dump into freezer containers & date them.
With 30-ish chickens and selling off my coming 3 or 4 year old hens to make room for new one, I usually have some group laying a few eggs.
 
I tend to leave mine sitting on the counter, and if we haven’t eaten them by the time they start to be “too old” - about 4-6 weeks old - then I freeze dry them. I have a 4 c measuring cup and I add 4 c of eggs, and 1 tsp salt (mixed in a little water) and blend them with a hand mixer. Then I pour them onto the trays.

My freeze dryer holds 4 medium trays and I believe I can fit 16 cups in one cycle. I then package them in Mylar bags with oxygen absorbers. They should last 20 years or so, if properly packaged. I probably need to do another batch today, my counter is overflowing with eggs!
