NY chicken lover!!!!

Finally settling back in. Mom began getting sick a week and a half ago, and a week ago was admitted to the hospital for a heart attack. Was at the hospital for a good week, while my hubby (also sick and in the ER once and urgent care once over the same period) tried to manage the birds and an active hatch.... Came home one day to a hatchery full of loose ducklings and a pheasant in the bookshelf, and lost a complex assisted hatch... He did a good job considering the circumstance! Fortunately, Mom is feeling better, almost everyone in the hatcher is now in the brooders, with the next lockdown scheduled for Thursday..
I am so very tired...
 
Getting bored with Strawberry jamming. The strawberry pineapple is my favorite to make so far. 2 cps berries, 2 cups pineapple, lemon juice, sugar and pectin easy enough.

anyhow I'll be freezing 4 quarts. Spent to much on strawberries again, but then they'll go into smoothies. Thing is the freezer is full. I may have to buy another smaller one just for berries.

if you use about 1/4 not ripe berries you can skip the pectin all together. I use home grown fruit to make jam all summer.

These are not mine.. I don't grow strawberries. While the recipe calls for 3 tablespoons of lemon juice it still does not set right.

I saw on Americas Test kitchen that not all lemons have the same amount of acidity. Meyers Lemons are not true lemons. Not all bottled lemon juice has the same acidity or amount of lemon juice. I can't seem to get my jams to 220* Just under about 210*. I think that may be the problem.

Anyone ever make strawberry rhubarb jam? Thinking of trying it, and some plain rhubarb jam.
I have recipes for both but have not done just plain Rhubarb. I do have a recipe for Rhubarb jelly. My Strawberry/rhubarb did not come out well the last time I made it. It was edible but pale looking. I don't like it that much.

The strawberries were very sweet and soft. I think organic or Aquaponic. (on a side note I googled growing in water and the first sites up are about growing marijuana) It had to happen.

For those who don't know. I got as many canning books at the library and then picked three I liked. "We sure can!" , "Preserve it" and "250 Home Preserving Favorites. " They do address vegetables as well as fruits. They also address some uncommon jams and jellies too.
 
Strawberry rhubarb jam sounds yummy...my berry production has slowed down so much with the rain. The chicks are enjoying the tiny berries.

@ladyhawke...hope your family is okay& you find some time to rest.
 
Good, I never heard of rhubarb jam, we have tons of it, be nice to make something out of it besides pie. The wife did, at my request for work, make a huge rhubarb upside down cake last yr. Turned out excellent! I also boiled some down, strained it, added water and a little sugar, rhubarb lemonade, without lemon of course, it was good.
 
I have never tried Strawberry Rhubarb jelly/jam...but Strawberry Rhubarb pie is one of my favorite.

I have been sick for a few days. I think that I got it from the little girl that I watch on Fridays. Ugh bad head cold and now it is moving to my chest, but that is normal. It wreaks havick with my athsma. Hard to breath and this humid weather isn't making it any better. I really need a week of dry weather to dry things up around here. The ducks run is nothing but wet sloppy mud. We are planning on finally moving it to a new place this weekend.

Talking about ducks..Some eggs are hatching. I had 6 that I had shipped to me and all made it to lock down. So far 4 have hatched and one is working on it right now. The 6th doesn't look like it is moving so I'm not holding much hope for it.

I also have some under a broody. She started out with 7. Somehow she got down to 3. I candled them the other day and only 2 are still good. Hopefully she gets them all the way..I may just pull them and give her one of these new babies to keep her happy.

We also got most all of the material to make a Hoop coop for the turkeys and I managed to sneak by DH enough extra wood and an extra panel to make a single one for more space for the chickens.

I have a Rhubarb/raspberry with orange recipe. You can't really taste the orange. At least no mine.
