Butternut Squash Soup
4 1/2 cups butternut squash, peeled and cubed
3 cups water
3 chicken bouillon cubes
1/4 t ground thyme
1/4 t cayenne pepper
8oz block of cream cheese
salt and pepper to taste (I don't add any)
Put squash, water, bouillon and spices in a pot, bring to a boil and simmer for 20 min, uncovered or until squash is tender. Put cream cheese in blender. Pour contents of pot in the blender over the cream cheese, blend until creamy. Makes 6 servings. [you can sub 3c chicken stock for the water and bouillon, if you rather]
Sweet Cajun Beef Stew
1 1/2 lbs stew beef
1 T veg oil
1/4 c flour
salt and pepper
2 c water
2 beef bouillon cubes
1 1/2 T Cajun seasoning (or to taste)
1 15oz can diced tomatos
1 sweet potato, peeled and diced
1 med green pepper, seeded and chopped
1 stalk of celery, chopped
1 onion, chopped
Heat oil in pot. Put flour, salt and pepper in a bag, shake meat in bag to coat. Fry in oil until well browned. Add water, bouillon, Cajun seasoning and tomatos. Simmer 15-20 min. Add veggies and simmer another 30-40 min or until meat and veggies are tender.
Cajun seasoning mix:
1 tsp of each: white pepper, garlic powder, onion powder, cayenne pepper, paprika and black pepper. Store in airtight container.
