Chicken pot pie is easy.
Fill a 13x9" pan with all your favorite (cooked) veggies.
Add some leftover cooked chicken
Add some gravy
Top with piecrust
Bake for 30-40min at 350deg
I boil diced potatos, diced carrots and celery for about 10 min, drain and put in 13x9 pan. Add frozen corn and frozen peas. I use 2 chicken gravy packets or 2 jars of Homestyle gravy, but I've also used Crm of Chicken soup for the gravy. I make my own pie crust, but you can use frozen piecrust, too.
Homemade pie crust:
1/3 cup shortening (Crisco)
1 cup flour
2-3 T water
Mix the Crisco and flour until crumbly, add just enough water to make it all stick together. Roll out on floured surface until it's the size and shape you want. Place over pot pie, pierce with fork before baking. You can also use this recipe for pies, but double the recipe to make an upper and lower pie crust for a pie.
I need to get some crisco...I made some peanut butter cookies the other week and I didn't have any so I just upped the butter and peanut butter and they were dry and lacking something if you ask me.
