Found the BEST recipe yesterday for butternut squash. It's a savory dish that can stand alone or be served as a side. I get tired of squash and butter with cinnamon or nutmeg and don't make a lot of creamy soups. This recipes is a keeper. I got it off allrecipes.com. As you can see it's a very forgiving recipe. I used what I had on hand instead of going to the store.
Ingredients
1 (4 pound) butternut squash - peeled, seeded, and cubed
1/3 yellow onion, minced
1/4 cup extra-virgin olive oil (I used coconut oil)
1/2 cup Italian bread crumbs
1 tablespoon minced fresh thyme (I used Italian Seasoning)
6 ounces crumbled blue cheese (I used pepper jack cheese)
sea salt and ground black pepper to taste
1/4 cup Italian bread crumbs (I used panko)
Directions
Preheat an oven to 425 degrees F (220 degrees C).
Toss the squash, onion, olive oil, 1/2 cup Italian bread crumbs, thyme, and blue cheese in a large mixing bowl. Season with salt and pepper. Pour the mixture into a large baking dish. Sprinkle 1/4 cup bread crumbs over the squash.
Bake in the preheated oven until lightly browned on top, 35 to 40 minutes. (I baked it for an hour, hey I was busy on BYC)
