Okay, cookie recipe, as promised. I would have PMed it but I'm too dumb to figure out how to mass PM.
Pepperkuku
1 cup butter
1 cup sugar
1/2 cup molasses
1 tbsp ginger
2 tsps cinnamon
2 tsps cloves
1 tsp baking soda
3 1/2 cups flour
1 cup blanched almonds, if desired (I do not use almonds when I make them)
Let butter soften to room temperature and work until creamy. Add everything else and mix well. Put on floured board and knead until smooth. (You may need to add a bit more molasses, sometimes I do, sometimes I don't.) Shape dough into two fat rolls, slightly flattened. Wrap in wax paper and chill thoroughly in refrigerator. Cut into slices (about 1/4" thick) and bake on cookie sheets at 325ºF for 8 to 10 minutes. (I do them at 8 so they stay nice and soft.)
