My grandmother makes pickled artichoke. Everytime I go to Italy I end up bringing home plenty of her jars of them. They're amazing. I'll see if I can get a picture.

recipe:
On a nice day in June or July, hike down the trail by the creek to the mulberry tree with a container to hold the berries.

Pick as many ripe mulberries as you can reach.

Do NOT wear your nice clothes or hat. If you are making jam it helps to bring a friend to help you pick enough.
These are the ingredients. Honey, lemon, berries, and liquid pectin.

You’ll actually need this many berries, about 6 cups, washed thoroughly:

I put them in a food processor for a few seconds, then add
3 C honey
Juice of 1 lemon
Cook in your heavy pan until the mixture reaches 220º. This will take maybe 45 min, depending on the liquid in the berries. Remove from heat, stir in a whole packet of liquid pectin, and spoon into your sterilized jars, following standard procedure.
Process in hot water bath for 10 min.
That’s all! Store some, and enjoy some!
